When the greens are this fresh they don’t need much! This 3-ingredient salad with French bistro vinaigrette is my go-to when I want something light but fancy. The secret is in the walnut oil – it makes everything taste like you’re dining in Paris. Perfect for when you want to feel bougie but it’s actually so simple!
French Bistro Vinaigrette:

1/2 cup neutral oil
3 tbsp walnut oil
2 tsp Dijon mustard
1/2 tsp kosher salt
3 tbsp red wine vinegar
1 finely minced shallot
1/2 tsp black pepper

Combine in a jar, shake to emulsify, and serve over fresh greens!

We’re making a salad today. It just might be the easiest salad I’ve ever made. Right. Farms just opened one of the most advanced green houses in the country. Why do you care about that? Because the lettuce is pesticidefree. Everything is automated, so even on the coldest or hottest days, the lettuce is growing in perfect condition. No hands ever touch farm’s greens. No rinsing required. So, you just open and they are ready to use, making them super convenient. When the quality of the greens are this good, I like to keep it very, very simple. I’m just doing some sliced onion. You could also use shallot. And then I have this French beastro style vinegrett that I love to keep on hand. I add some roasted sunflower seeds for crunch.
