And the soup’s on. Today I’m sharing my favorite creamy sausage and tortoillini soup. It’s cozy, comforting, and this is so easy to make. It’s perfect for those nights when you want something hearty, but don’t want to spend hours in the kitchen. So, let’s start by cooking a package of Italian sausage in a big pot until it’s nice and brown. While that’s cooking, we’re finally chopping the onions, the celery, and the carrots. About a medium onion, two car two carrots, and two celery stalks. Add those to the pot with a tablespoon of fresh garlic, plus a tablespoon each of Italian seasoning, onion powder, and don’t forget a good pinch of kosher salt and a dash of cayenne for heat if you want that. Once everything is soft and fragrant, add a whole can of crushed tomatoes and about three cups of chicken broth. You can always add more broth later if you want your soup a little thinner. It’s totally up to how thick you like it. So, let’s simmer this for about 15 minutes so all the flavors come together and the broth thickens up nicely. Now, here’s the creamy part. You’re going to stir in a full block of cream cheese. Let it melt into the soup. It makes the broth rich and velvety. Then, add a bag of fresh spinach and a bag of cheese tortillini. I love five cheese tortillini for this, but you can use whatever you like. Pour in two cups of heavy cream and gently warm everything through. Just be careful not to boil it once the cream is added so it stays silky smooth. And that’s it. This creamy tortillini soup is filling, flavorful, and perfect for a busy night. On to the next video.
