Today we’re making Pumpkin Risotto, a creamy, comforting Italian classic that’s perfect for fall or any time you crave something rich and velvety. Hello everybody. Tonight we make a pumpkin rotto. I got over here already. I soft them up a little bit. Take a little time to cook. And now what I do, I load the gas and I put this on the side like this. Okay. And now what I do, I put a little oil over here. It’s enough. And we warm up now. This oil got the rice go here. Let’s warm up the oil a little bit. We got to saute the rice. Ario rice. Rotto with a pumpkin. Oh, night’s time pumpkin. Okay, now this. Okay, now the rice. What I do? I wash a little bit with a cold water. Okay, take all the stuff out. It’s really good. Do like this. And we put the rice not right over here. I got a good spoon to help me take all the rice out. Okay. And now we got to cook a little bit of the rice. Look here. Oh yeah, baby. I look good. Michelle Cook sent you 500 stars with the bunny ears. Oh, thank you very much for the pumpkin. I I was called my wife. She said, “No, no, say like this. You got to say pumpkin.” I say, “Pumpkin.” He said, “No pumpkin.” Hey, I go. Okay. Now, look how beautiful this rice. What you need? You need a little wine. And let’s put white wine dry. [Music] Oh, nice. Smell good. If you want to after you’re done turning that, if you want to just show the pumpkin that you carved out over there. Yes. Okay. Now, this turn. This is the one I was use. I use F this. This it’s a four pound. I was use F two pound. And look how be. But it’s so hard to take the skin out. Oo. So for those that are carving your pumpkins, don’t throw the meat out. You can make a good risoto with it. Yeah. Look at that. Everybody after the this Halloween, everybody you see pumpkin on the street, everybody throw away. But it’s good. They make like you cook, you make a blend and you eat, you drink with a nice toast bread. Oh, it’s so good. All right. Now we mix everything together. The rice and the pumpkin. Okay. Now this you got to cook everything together. Oh, he look good in that, right? And you want to just explain what was in uh the pot before the pumpkin. Okay. You got a pumpkin and we put a I cook a shallot. I saute the shallot with oil. I cook the shallot a little bit after I put the pumpkin and I cook like maybe the 10 minute like this is soften them up. And now we put it together with the rice and we got to make ratoto. And now like I say we got to start use the chicken stock. And this is the chicken stock. You got to put a little bit at a time. Not everything at one time. Okay. And we leave like this. And now this it got to cook really really low. And we put in a little black pepper. Okay. We got the flake pepper hot and we use little salt but not too much salt. Got the chicken stock. It’s salty. Only like this. But after we taste I got to put the cheese and the pegorino cheese. It’s salty too. Okay, now we need them more. All right. Smells good. Look good, huh? Mhm. Nice. And thank you to Patricia and Dolores for the stars. Thank you very much.
