Bruschetta 3 ways
– Recipe for 2 people
– Slice rustic bread to get 6 big slices (about 50 g each)
– Place them under the broiler and toast them on one side (time varies for every broiler; start with just 1 minute and increase if needed)
**Garlic, Basil, and tomato**
– Brush 2 slices of bread with a fresh clove of garlic
– Then brush one basil leaf over it
– Cut one cherry tomato in half, and brush it over the slices
– Cut about 120 g of tomatoes into small cubes, place them in a strainer, add a pinch of salt, mix, and let them drain for 10 minutes
– Spread the cubed tomatoes over the bread slices
– Garnish with a leaf of basil
**Cream cheese, Smoked salmon, and Black olives**
– Spread 2 tablespoons of cream cheese over 2 slices of bread
– Cover with smoked salmon
– Chop a tablespoon of black olives and distribute them over the salmon
– Garnish with a stem of santolina
**Avocado and Fried egg**
– Get some aluminum foil long enough to completely wrap a slice of bread
– Fold it using a ruler to have a strip about 2 cm tall
– Bend the strip to have the shape of a bread slice; be sure the two ends of the aluminum strip overlap a few centimeters
– Block the two ends, wrapping them with cling film
– Place the created mold in a flat pan on medium heat, and add a small knob of butter
– When the butter is melted, place an egg inside the mold
– Keep the temperature low for a minute, add salt and pepper, then cover with a lid and finish cooking for 3 minutes. The yolk should be runny and the white completely set
– Brush 2 slices of bread with a bit of mayo
– Slice 1 avocado in thin slices and arrange the slices over the bread
– Cover with the fried egg
– Decorate with chives
