Starting with a 40 lbs pork ribs, for 6 hours? Will post updates… after we build the damn grill.

    Very good grill but not a smoker. Still can make ribs on it but start in the oven. If you can get some steaks and vegetables maybe some seafood and grill it all up hot and fast. Enjoy it man that’s a sick setup

  3. Don’t you dare use that lighter fluid poison in your brand new grill. Get a chimney and some tumbleweed/snakenest natural starters.

    Those work amazing with charcoal lump mesquite and use cooking oil to start your fire properly

  6. Return the fluid and replace with a chimney or electric starter to avoid messing up the flavor. Everything else 10/10 no notes.

    The original point of the performer was the taste of charcoal with the convenience of quick propane ignition. Kinda turned into the classic Weber kettle with a great side table when that feature faded away. Some have the charcoal bin underneath, nice grill.

  16. 40 lbs of ribs on a new kettle? That’s pretty ambitious! Depending on how you prep them St. Louis ribs take me 4 hours and baby backs about 3, I have a Kamado, but for ribs should be similar times for your setup.

    My wife bought me one of these 15 years ago for fathers Day fornour 1sr born. I bought another one this past summer and will use it when the first one gets to its end.
    Amazing, bbq!!
    And yes, when I started, I used lightef fluid. It’s not going to poison anything. You do you, get your feel for bbqing and grow from there!!

    Return the pellets and lighter fluid and get a charcoal chimney and some chimney starters.

    Edit- get some propane cylinders the performer.

    Lighter fluid was for the engagement 🥵

    This Weber is the Performer Deluxe, which includes the propane igniter. I just omitted the propane cuz it’s an old tank from camp.

    thanks for all the tips tho! Took longer to build than expected… will post pics of ribs next 🤭
