the real question here is: is a “shit ton” more than, less than, or equal to an “ass load”?

confession time! Before you judge me please look at my engagement with this sub. I LOVE onions. But my mom made mashed potatoes like this one Thanksgiving when I was a kid. Everybody loved them. My cousin called them Auntie Shel potatoes and asked for them every year. But I hated them to the point that my mom would always make a portion of mashed potatoes without them for me. (I am autistic so some food sensitivities will just really get me) I think it was just a texture thing where I want mashed potatoes to be smooth and the onions mess with that

I do this when making fully loaded mash, but i also add crispy bacon lardons and shredded cheese (emmentaler or cheddar). I also leave the skins on about 33% of the spuds. I don’t make it very often for heart health reasons, but it’s REALLY GOOD.

I figure, I’m gonna be adding a bunch of butter anyway, why not saute 3 diced onions in said butter?
Had this particular batch with smoked herring & sauerkraut. Mmm. Oniony.

In Denmark we have a poor mans dish, mash topped with caramelized onions and crispy bacon bits. Name is Brændende kærlighed, ie Burning Love.
I usually add some chilli powder to the onions for a bit of heat.
Pickled red beet on the side, but any sweet/sour pickle goes.
