1. A roast chicken dinner.

I piled my pan with two colors of sweet potatoes, some chicken thighs with a Mediterranean spice blend.

For my veggie side it is onions, green beans, and fennel with preserved lemon.

The plate got a quick pan sauce from the sheet pan.

  1. Lunch bowl/ quinoa, lentils, broccolini, purple carrots, a thick skinned varietal of tomato, a boiled egg all topped with salsa macha and lemon salt.

  2. Leftovers: crispy quinoa, roasted carrots, broccolini, endive, pomegranate seeds, and pomegranate dressing

  3. Roasted cauliflower
