They grocery store by me has 1lb packs of hearts on the regular. I rinse them first to get rid of excess blood then put in a small sauce pan with a good amount of ginger and green onion, and cover under a half inch of water.

I then bring it to a boil uncovered while stirring occasionally then a roiling boil for 1 minute then strain.

It's on a bed of cilantro with a dipping sauce of soy paste (think maggi but better) that's mixed with raw garlic and green onion.

  2. I usually much prefer them grill, but if they still retain that crunchy texture, then I can see boiling with aromatics really good nonetheless. Cheers!

    I prefer stir fry. Cut them in halves before cooking. The texture makes them good

    For $4 I saw a bunch of chicken gizzards. Poor man’s shrimp. They’ve disappeared for awhile. I’m feeling an economic crash coming.

    Please dawg skewer these and grill them, sauté them, fry them – anything but boiling them.

  6. To clean them, instead of rinsing boil them for a couple of minutes then drain, rinse, then into the pot with ginger, green onion and water to simmer. This will be more effective for getting all blood and impurities out.

    Probably some of the cheapest meat out there. I like to toss in oil and seasoning then air fry them.

    Hmmm I love my beef and chicken heart but I’m scared of eating them like this lol I’m so used to having them in anticucho that it never occurred to me to ever make them any other way

  10. I worked in Brazil for 3 years. I ate chicken hearts weekly when I was there, I enjoyed it, but haven’t had them since.

    Highly recommend Lebanese chicken hearts and liver with pomegranate molasses sauce 🤤 with garlic sauce (Toum) or hummus on the side.

    Perhaps I didn’t cook them right, but I’ve always found them a bit too rubbery for my liking, though the flavor was just fine.
