Making a copycat Olive Garden Zupa Tuscana soup. Literally my favorite soup. And then I’ll be pairing it with a Caesar salad and some baguette bread. This is how I make the soup though. Cooking half a package of bacon. We got a pound of the spicy Italian sausage. And we’re going to brown these up. Once you got the sausage all browned up, we’re going to go ahead and set this aside. And then we’re going to start the rest of the soup in the same pot. So, we’re going to sauté up a whole onion in the same pot that we were browning the sausage in. Find all the brownness on the bottom. That is going to be flavor, promise. Bacon’s done. We’re going to go ahead and pull that and set it to the side. And then once it cools, we’ll end up chopping it up to go in the soup later. Onions will continue to sauté. It’ll kind of like naturally just deglaze all that brown stuff that was stuck to the bottom of the pan. Then, we’re going to add some garlic. Cook that down until it’s fragrant. just like a minute or two. Next, we’re going to add in our potatoes that were thinly sliced just to like pieces like that. Next, we’re going to go in with six cups of chicken broth. Or if you’re like me, we’re going to do six cubes of bullion, which means we have to do six cups of water. And that’ll equal six cups of broth as it cooks. We got two, four, and six. And then we need four cups of water. There’s two. And four. And that is all the liquid we need for now while these potatoes cook down. And that should take about 20 minutes or so. So, we’re going to add a bundle of kale. We took the stems off and then chopped it up. Awesome. And then we’re just going to let that cook down for a bit. Maybe like I don’t know 5 10 minutes or so. Okay. So, it’s only been about five minutes later. Now, we’re going to go ahead and add the last of the ingredients cuz I want to give the cream time to time to heat up in there as well. So, we’ve got a cup of cream and then got to add the sausage back in. And then we can’t forget about the bacon. All right, we’re just going to let that all marry together and let that cream heat up and then the soup will be done. Probably I don’t know like 5 minutes or so, maybe 10. We’ll see. Oh, and don’t forget to salt and pepper to taste. That is important cuz you will need more salt and pepper. But other than that, there it is. Add a little bit of freshly shaved parmesan to the bowl. Quick little taste test. I already know it’s good cuz I made it. Eating in front of the TV tonight cuz your girls got to catch up on Jersey Shore. [Music]
