Vincent Dauvissat is perhaps the only Chablis producer who stands close to Raveneau in terms of reputation. The family-owned estate (founded by Vincent’s grandfather, Robert) has been in operation since 1931, and currently produces wine under two labels: Vincent Dauvissat for estate-owned fruit and Dauvissat-Camus for wine made from wider family holdings.

This bottle is from the La Forêt or Forets climat (Dauvissat chooses to label as “Forest”) within the Chablis Premier Cru appellation. It sits directly between two other famous 1er Crus, Montmains and Butteaux. Wines from Forêt are typically complex but leaner than Grand Crus, due to less sun exposure. Like Raveneau, Dauvissat isn’t afraid to use winemaking to add complexity, and this bottling spent extended time in old oak barrels and nearly a year on its lees.

Tasting notes: Light gold color. Initially shy, it came alive after 15-20 minutes in a big Burgundy glass, then kept getting better throughout a 2-hour dinner. Nose of lemon, white blossom, roasted nuts, and wet stone. Rich, elegant palate with vibrant acidity. Long, saline finish, with a bit of creaminess towards the end. Really nice right now but will certainly age well.

    I love 1er cru Chablis… in my experience you get a nice step up in consistency of quality year to year above standard Chablis for not too much more $$
