Greek Salad (Horiatiki Salata)

Ingredients:

2 cups beefsteak or Roma tomatoes, cut into 1-inch cubes
2 cups cucumber, sliced into half-moons
1 cup green or red bell pepper, cut into thin strips
¾ cup red onion, thinly sliced
¼ cup capers, rinsed and drained
¼ cup Kalamata or green olives
8 oz low-fat crumbled feta cheese
¼ cup extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
Pinch of salt and black pepper

Instructions:

In a large bowl, combine all ingredients except the olive oil, vinegar, oregano, salt, and pepper.

Gently toss the vegetables to mix evenly.

Drizzle with olive oil and red wine vinegar.

Season with oregano, salt, and pepper to taste.

Toss everything together until well combined.
