Poblano has had corking for 2 months! Other ones eventually reddened but this guy is determined to keep it green.

Is the weather very cool? Cooler weather slows the color change.

Sometimes after you’ve exhausted being nice and have gone through the mockery and belittlement stage try playing the cold shoulder. Ignore that puppy for a few days and then once you’ve convinced it you’ve forgotten about it the magic will happen

I harvest mine like this to roast. I had a couple that went partially red.

Have the temperatures dropped recently ? The leaves look a little curled has it had a dry spell and/or an overly wet spell ? A dry spell may explain the indented top of the chilli. Can you ring the plant inside for a short while ? That’s should help it somewhat with warmer temperatures and higher co2 levels
