this has become the most divisive dish in the Arab world bamia an okra and meat stew I’m convinced if you don’t like it it’s because you’ve never had it done right so take notes oh my God start by dicing a yellow onion and keeping it to the side and then sear a pound of stew meat and avocado oil until it develops a nice crust on two sides drop in your diced onion and sauté for 5 minutes then add a bag of frozen okra and sauté for 5 minutes until it gets soft then add a small can of tomato paste coriander cumin pepper and salt mix it well and then add six cups of water and bring to a simmer add the meat back in cover and simmer for 90 minutes for the rice toast 1/2 cup of vermell noodles and avocado oil until they Brown and then add 1 cup of washed veg rice toast it in the oil and then add salt 2 cups of water cover and simmer until it’s nice and fluffy and for my favorite part flash fry some garlic and olive oil and then add coriander and fresh cilantro mix that all together and once it’s super fragrant drop it right into the stew then plate and garnish with a leppo pepper more cilantro and enjoy

    – Ingredients

    For the stew:

    – 1 lbs Beef Stew Meat
    – 1 Yellow Onion
    – 1 Bag frozen Okra
    – 1 small can Tomato Paste
    – 1 tbsp Salt
    – 1 tbsp Black Pepper
    – 1 tbsp Coriander
    – 1 tbsp Cumin
    – 2 tbsp Olive Oil

    For the Rice:

    – 1 cup Basmati Rice
    – 0.5 cup vermicelli noodles
    – 2 cups Water
    – 1 tbsp Avocado Oil
    – 1 tbsp Salt

    For the Finisher

    – 5 Garlic Cloves
    – 1 cup Fresh Cilantro
    – 1 tbsp Olive Oil
    – 1 tsp Coriander
    – Instructions
    1. Dice the yellow onion and grind the garlic into a paste with a pinch of salt.
    2. Get a large heavy bottom pan on high heat for two minutes. Drop to medium and add enough oil to just cover the bottom of the pot. Add the stew meat and sear on all sides until nicely browned. Remove and keep to the side.
    3. Next add the diced onion and saute until soft, about 5 minutes. Then add the bag of frozen okra and saute for an additional 5 minutes.
    4. Add the tomato paste, salt, black pepper, coriander, cumin, and seared meat and mix together well. Fill with water and bring to a boil. The cover, drop to simmer, and let it ride for 1 hour.
    5. Rinse & soak the basmati rice in cold water for 20 minutes.
    6. Place a small pot on high heat for 2 minutes. Add the avocado oil and toast the vermicelli noodles until browned. Then add the rice and salt and toast for another minute. Finally add the water, bring to a boil, then cover and drop to simmer for about 10 minutes.
    7. For the finisher, place a small pan on high heat for 2 minutes then drop to medium. Add the olive oil, garlic, coriander, and cilantro. Flash fry until fragrant and immediately drop into the stew.
    8. Plate and garnish with fresh cilantro and aleppo pepper and enjoy
