Pastitsio (Greek: παστίτσιο) is a pasta bake made with minced beef and a béchamel sauce. This version is a very simple Cyprus one, known as makaronia tou fournou, often made by my mother (apart from the use of penne pasta). Every cook has their own way of making this dish.
Pastitsio is a dish usually found at every celebration or family gatherings.

Ingredients:
To Serve 4
4 Cups of Pasta (Bucatini, mezzi ziti or penne)
1 Onion chopped
300g Beef & Pork mince mixed (or any minced meat or meat substitute).
1 bunch of Parsley (Chopped)
Salt & Pepper for seasoning
250ml Stock (vegetable or beef)
1-2 tbls of Tomato Paste (or 4 -5 fresh tomatoes).
1oz Butter
2 dessert spoons Plain Flour
1 egg
Ground Nutmeg
2oz grated cheese (of choice)
