[Music] Before we say goodbye to summer, let’s make this easy Mediterranean couscous salad. To a large bowl, add some prepared couscous. Then layer in garden fresh veggies, cucumber, bell pepper, and red onion. Thin calamata olives, and a pint of quartered cherry tomatoes, freshsqueezed lemon juice, and a measure with your heart amount of Costa olive oil serve as the dressing. Give that a good mix before seasoning with salt and pepper. Get in there with your hands and crumble in a block of feta cheese and sprinkle with fresh chopped basil. Toss it together once again and you have a flexible side salad or lunch on the go to pair with the protein of your choice.

Cous cous is wheat
I’m Mediterranean from Algeria where Couscous is our national dish and never had it in a salad. We have it mostly with a meat and vegetables stew or with steamed vegetables like carrots, potatoes and peas along with hard boiled eggs and olive oil. While this recipe is still interesting and seems refreshing, I wouldn’t say it’s Mediterranean.
