I finally did it! After spending the last 6+ months getting fast food nearly every single work day, my partner and I have decided to start a meal prepping schedule! This week, our entrees include a taco pie and buffalo/bbq chicken sandwiches; our sides include cheese sticks, cheez-its and sandwich crackers; and our sweet treats include homemade chocolate pudding and Greek yogurt with peppermint bark and s’mores granola toppings! 😄🥳



Recipe for the taco pie if anyone’s curious:

• 2lb 85/15 ground beef
• 2 cans sweet corn
• 2 cans regular black beans
• 2 taco seasoning packets of your choice
• 2 cans Pillsbury crescent rolls
• 3 cups shredded cheese (we used mexican blend)
• 1 jar chunky salsa
• 1/2 cup white rice
• 1 cup water

Preheat your oven to 350°. Oil a 13×9 casserole dish and line your crescent rolls around the entire dish, making a pie crust.
Into a large oiled pan, brown your ground beef and strain the grease.
Add in your corn, beans, taco seasoning and salsa and stir to incorporate.
Add your rice and water and put the lid on your pan, letting the rice cook.
After your rice is cooked, pour the contents of your pan into the casserole dish, and layer the top generously with shredded cheese.
Place into the oven and let cook at 350° for 30 minutes, or until the bottom of your pie crust is slightly crispy.

    I would def try and cut back on how much of this is still highly processed… meal prepping cheez its and sandwiches is … honestly.. ??? Not really meal prepping IMO. We all start somewhere so it’s okay if this is the starting point but unless you’re allergic to vegetables or real food I’d shoot to do one full meal next week made from scratch in its entirety and work your way up to not just taking premade stuff and putting it into containers..

    Buffalo chicken sandwiches (makes 3 sandwiches)

    • 1 lb shredded chicken, salt and peppered
    • 1/2 cup buffalo sauce of your choice
    • 2 tbsp mayo
    • 6 slices of bread
    • 3 slices Swiss cheese (or whichever you prefer!)

    We cooked our raw chicken for this, but you can use pre cooked and shredded as well! Just incorporate the sauce and mayo into the chicken and lay out your sandwiches!

    BBQ chicken sandwiches

    • 1 lb shredded chicken, salt and peppered
    • 1/2 cup bbq sauce of your choice
    • 6 slices of bread
    • 3 slices Swiss cheese (or whichever you prefer!)

    Same instructions as above, pretty much 😅

    Greek yogurts

    • 1 cup low fat Greek yogurt
    • 1 crushed candy cane
    • 1 tbsp chocolate chips

    and

    • 1 cup low fat Greek yogurt
    • premade s’mores granola

    i just wanted to comment and say that i bought the same meal prep containers and the thought of washing them makes me want to put my head in a hole and cry… i applaud you for having so many clean at once
