How does unofficial BURGER WEEK sound? Last week I shared some pre-made vegan burger ideas for summer events and BBQs. Today and upcoming I thought I would share some homemade varieties. Making your own is so easy to do, cheaper and better for ones health. Here is one variety for you. The spices are suggested amounts. Adjust for your own personal taste. Use fresh or dried, adjust for what flavor profile you are going for. As usual, make this recipe your own and enjoy!!!

Chickpea & Quinoa Veggie Burger

•Chickpeas, 1 can or 1.5 cups (save the liquid if using canned, aguafaba is gold)
•Quinoa or rice, 1/2 cup
•Onion, 1/2 c finely chopped
•Chopped veggies, up to 1 c (I used red peppers)
•Garlic, 2-3 cloves or powdered/granuted, 1 t or more to taste
•Psyllium, 1 Tish or 1 flax egg
•Cumin, 1 t
•Chili powder, 1 t
•Cayenne, 1/2 -1 t
•Smoked paprika, 1/2-1t
•Salt and pepper, to taste

*Condiment ideas: vegan cheez, avocado, tomatoes, cucumbers, lettuce, pickles, vegan mayo, mustard….

Simply mush up beans. Add the rest of the ingredients. Adjust seasoning to taste. Form into patties. I used a heaping half cup. This will make 3-4 patties. I would recommend chilling or freezing in the fridge before frying to hold together. However, mine did okay with no chill time. IF frying, add oil to a pan, cook over medium heat for 20-30 minutes, and flip at half-time. Patties will be crisp on the outside and cooked through. Airfry? I have not tried this, but cooking at 400 should work as well for about the same length of time. Serve: Add cheez if using and put it all together with whatever you like on your burgers. I did not have any buns and used corn tortillas. I know that may sound weird, but I loved it. I am not a big bread fan. Do YOU! Feel free to double or triple this recipe. Use up within five days and/or freeze up to 6 months!

How gorgeous is this burger? This is my chickpea quinoa veggie burger and we are going to step into the kitchen and I’m going to show you how it all went down. All right, kids. So, last week I shared some ideas with you for vegan burgers for July 4th. And I would be remissed if I didn’t actually show you some homemade ones. So, I’ve kind of decided I’m going to make this like an unofficial burger week. I am doing all like barbecue foods for July and I think that totally fits the picture. So, I used up some of my food prep. I’m always sharing with my students how to repurpose leftovers and to do such and always have foods handy in your freezer. Chickpeas and quinoa are something that I always have frozen. You could use any beans with this. Rice would also work. So, I simply mashed up my beans as you saw. Added vegetables. I usually will grill my onions first, but I was feeling lazy and since I was frying them, it just didn’t really matter to me. You see, they turned out really beautiful. A little dark, but that’s okay. I was kind of spacing off and I kind of forgot about them. And then uh put what you like. To me, avocado is that healthy fat that I love and I cannot eat a burger without it. You do you. Mix up this recipe. Add whatever spices that you like and enjoy. [Music]
