    I got a flattop insert for my Spirit last summer and it completely changed the game for weeknight dinners, especially for stuff like cheesesteaks and smash burgers. I barely touch my old cast iron pan anymore for indoor searing. There’s just something about doing it right on the grill that makes everything tastier, and the cleanup is so much easier too.
