I’ve been craving a nice egg salad so that’s what we’re making for lunch and we’re going to add some fun ingredients but first I’m just kind of chopping up our eggs by pushing them through this wire rack easy it’s also very satisfying I love it it’s a nice chalk not too big not too small for our usual suspects we have mayo and some mustard and I’m going to add in a little bit of each of these mustards but you can definitely just do one type of Dion we’ll do a touch of mayo not too too much just to hold it together we got a dainty little shallot here we’ll just mince that up right on in then I chopped up a bunch of herbs Dill chives and parsley kind of like a fine chop then I’m going to chop up some sundried tomatoes to add and these are going to be a really lovely POA flavor in there a juicy Papa flavor and I also really enjoy the texture of a sundried tomato nice and chewy then I’m just going to do a little spoonful of Capers for a little salty punch salt just a gentle little toss and then it’s ready to go and I’m going to eat it with some toast but it’s also really good with like crackers buttery crackers delish and I save some chives as well for the top I also like the little olive oil drizzled on top which is potentially gilding the lily a bit but it is good and that’s a nice little lunch if I do say so myself yum the sunri tomato is really really good tomatoes and eggs classic combination yum

    Are you still in AP? If so, I hope you’ve gotten food at Toast! Their challah French toast is almost as good as my dad’s, and that’s really saying something since he’s an Ashkenazi Jew 😂❤

    No mayo on bread, a half measure of mayo in the Egg mix…😢

    We always have pickled eggs in the refrigerator and they are excellent to make egg salad on a whim.

    What are you all going on about?? The nationwide average cost of a dozen eggs is $5 right now. Even at $8/doz. the 4 eggs she used would only cost $2.68. Ya'll are pressed about the protein for a meal costing less than $3?? Let the woman make her egg salad in peace. 😂

    Also try with olive oil and vinegar in the dressing ❤…. The extra vinegar makes it peeeerrrfect!
