That looks delicious and I will certainly try it. The betroot salad I have improvised and is also filling, nutricious and delicious is: I grate a raw beetroot or half, grate a carrot, chop parlsey and red bell pepper and mix them. I add olive oil and sqeezed lemmin.for dressing, a little salt, then top it with chopped walnuts and mix again. The quantity of i gredients depends on how many people you are making it for. I use raw beetroot, after washing well, because you get the fullness of its nutrients.
