


Lemon olive oil cake with tofu instead of eggs 🍋🍋🍋
This is what I'm offering this weekend to the clients of my vegan catering service. They pay me, they get a delicious cake, and they don't have to wash dishes 😁
RECIPE
3/4 C silken tofu
1 C olive oil
1 C sugar
1/2 C brown sugar
1/4 C lemon juice
Zest of three lemons
1 t salt
1/2 t baking powder
1/2 t baking soda
2 C all purpose flour
1 C soy yogurt.
Cream tofu and sugar until light and fluffy. With mixer running, add oil in a thin stream to make an emulsion. Add zest and juice. Sift dry ingredients then add to mixer alternating with yogurt. Pour batter in mold, bake for 40 to 55 minutes. Because all ovens are different, times are approximate. Check your cake for doneness after 45 minutes. Remove from oven, cool, unmold, decorate 🍋🍋🍋
