Portland-favorite Canard opens new Beaverton restaurant

Beaverton is starting to look a lot more like Portland.
Well, maybe not in the sense of walking down the street, but the culinary prowess that the City of Roses has become known for has seemingly gravitated west toward Washington County.
Canard, the French restaurant that has carved its name among Portland’s top eateries, opened its newest outpost this October at 12395 S.W. Broadway St. — what longtime residents might remember as the former Beaverton Bakery.
Two-time James Beard Award winner Chef Gabriel Rucker and co-owners Andy Fortgang and Taylor Daugherty first announced plans in March for the expansion, marking the restaurant’s second move into the suburbs after opening an Oregon City location in 2022.
“One of the principles of Canard from day one has been accessibility. Open kitchens, familiar flavors and informative wine and beverage service are common threads through all of our locations,” Daugherty said. “Intentional expansion has allowed us to bring our brand of hospitality away from the city center and facilitate further accessibility.”
The site, which formerly housed a theater before becoming a bakery and, more recently, a sign shop, offered what the owners have described as holding real potential. At about 2,800 square feet, the Beaverton location seats around 70 guests, making it the largest of Canard’s three restaurants.
“We are very excited about the upper mezzanine, which gives us the ability to offer great views of the nightly action as well as an area for large private dinners,” Daugherty added. “We hope to be a go-to venue for large gatherings in Washington County.”
Familiar flavors, refined execution
The opening menu closely mirrors the Oregon City location, bringing along its robust array of signature dishes and drinks that blend refined technique with comfort-food appeal.
There’s the herb-roasted steelhead, tender and buttery, bathed in smoked mussel chowder with celery root and herb pistou. Then there’s the mac and cheese, velvety beneath a brittle crown of crispy fried onions that crumble with each bite.
Smaller plates like broccolini highlight the kitchen’s knack for contrast and texture, pairing creamy miso ricotta with the crunch of pecans, a piquant chili flake and a sweet touch of quince.
And, of course, you’ll find some of the dishes that helped Canard earn its reputation in Portland: the signature steam burger — tucked in soft Hawaiian buns and draped with cheese — and foie gras dumplings that swim in tom kha broth and explode with flavor.
“All of the items on the dinner menu are tried-and-true dishes from the other Canard locations,” Daugherty said. “Our goal with the Canard menu isn’t to staunchly adhere to or reinvent any cuisine. Our only requirement for a dish is that it tastes good.”
The only dish exclusive to the Beaverton location is the s’mores icebox cake. Inspired by a love of whipped cream, it layers graham crackers and smoked chocolate ganache, topped with a torched marshmallow crust.
Beaverton’s new brunch spot
Alongside daily dinner service, the restaurant recently kicked off weekday lunch from 11 a.m. to 2 p.m. and weekend brunch starting at 10 a.m.
Brunch features iconic dishes like the duck stack: fluffy pancakes piled high with duck gravy, Tabasco onions and a duck egg — plus a piece of seared foie gras if you’re feeling extra decadent.
Other brunch items keep meals playful and polished. Tokyo hot chicken tenders are tossed in spicy togarashi oil and drizzled with koji honey, while Le Benedict sticks to the classics with smoked ham, hollandaise and crispy potatoes.
Lunch follows a similar rhythm, reimagining classics from the smoked French dip with onions and gruyère to halibut fish and chips served with malt-vinegar fries. And as with all of Canard’s services, customers can pair food with a drink from its versatile cocktail list.
“Things are going really well; the team is focusing on getting to know the community and the launches of these two new meal periods,” a Canard spokesperson said.
