Tell us about the ambiance.
SB: Zaytinya Las Vegas was designed in partnership with the Rockwell Group, known for its stunning, immersive spaces. The ambiance fuses Mediterranean warmth with modern elegance—think airy interiors, rich textures, warm oak finishes and mosaic tile work. Soft lighting, greenery and sleek architectural elements create a space that’s both vibrant and intimate, echoing the spirit of the Eastern Mediterranean while offering a uniquely refined dining experience.
What are some standout, must-try dishes and cocktails on the menu?
Stephanie Martinez: Who doesn’t love hot, freshly baked bread? Our housemade pita is a showstopper. Served warm and aromatic, it’s the ideal companion to any of our signature mezze. It’s a sensory experience that immediately sets the tone.

The Minoan Sour cocktail, created by concept chef Michael Costa, uses Spanish olive oil emulsified with egg white to achieve an ultra-creamy texture.
If you had to choose one dish on the menu, what would it be and why?
SM: I can’t get enough of the köfte. These Turkish beef meatballs are skewered and grilled to juicy perfection, seasoned with a blend of Euphrates mint, Greek oregano, Aleppo pepper, sweet paprika and cumin. It’s the kind of dish that keeps you coming back bite after bite—comforting, flavorful and undeniably satisfying.
“Zaytinya has always been an expression of my love for the amazing foods and flavors of the Eastern Mediterranean.” –JOSÉ ANDRÉS
