I made some veggie scrap / chicken bone stock about a week and a half ago without the intention of canning it. I froze half and then stuck the other half in my fridge hoping to use it within 3 days. I realized it was still in my fridge today and was getting ready to toss it when I noticed the jar sealed. Is it safe to eat? It smells fine and I’m spooning off all of these little fatty bits from the top. Unsure if it’s safe or not since I didn’t intentionally seal it.

    No, I would not. Jars aren’t magic. You didn’t seal it, it didn’t seal itself. The lid just pulled down in response to a temperature change. Stock is used to grow things in labs for a reason, my dude. It’s the perfect environment for all kinds of molds, bacteria, and yeasts.

    That’s like $2.00 of broth. I’m not getting food poisoning over it.

    Yes it should be safe to eat since its only been 3 days and stored in the fridge.

    This was not sealed on purpose its just the way it works when you put hot liquid in the jar and cool it down. The same thing happens with fridge pickles and even tupperware.

    Edit: i did not see rhe week and a half part 😅 thats too much time passes unfortunately

    USDA says chicken stock will keep 3-4 days in the refrigerator. I would toss it.

    If it’s been in the fridge for a week without being processed no I would not risk my safety for 50¢ of food, be reasonable.

    No, don’t eat this. Stock is literally what they use to grow bacteria in a lab. Even in the fridge it’s only good for three days.

    If you didn’t pressure can it, stock doesn’t have a long shelf life. Bacteria loves protein.

    I probably would eat it but I make mine at high pressure in my instapot for an hour then chill or freeze it.

  8. I would, but I would not serve it to anyone else. its not worth it.

    I’d eat it. Mybe be sure to get it to a rolling boil first.
