🌯 Lunch: [Ground beef burrito bowls](https://www.budgetbytes.com/easiest-burrito-bowl-meal-prep/) by Budget Bytes (8-10 servings) -Doubled the recipe and served over white rice. 4 larger portions for my husband, 5 for me. I like adding a handful of shredded lettuce to mine after reheating. Super easy and delicious! I’ve tried both ground turkey and ground beef, and they’re equally amazing.
🍜 Dinner: [Garbanzo bean stew AKA Spanish potaje de garbanzos](https://spainonafork.com/spanish-potaje-de-garbanzos-recipe/) by Spain on a Fork (6 servings) -Tripled the recipe and served with bread for dipping/sopping up all that deliciousness. This is SO tasty, a keeper. I recommend using a food processor instead of a mortar and pestle for the thickening mixture (which is delicious as is by the way). I love using gold potatoes in soups and stews. So so good.
