New to the Mediterranean diet as I've heard so many health podcasts mention it about the best diet you can have for health!

I'm wondering if there's many vegetarians following it as well?

I'm vegetarian, don't eat meat or fish, rarely eat eggs.

I'm going to start taking omega supplements due to not eating fish – if anyone has any recommendations that would be great!

I meal prepped a load of veg- asparagus, tenderstem broccoli, peppers, courgette, cherry tomatoes, potatoes and then halloumi and tofu.
All prepared with EVOO of course and then Italian herbs 🥰

I’ve been following the MD for almost a year now. I’m not vegan or even vegetarian but I always liked plant-based foods and I find myself eating a lot more of them now. When I’m looking for new recipes the first place I go is some of the vegan creators I follow. However I don’t use things like vegan dairy or replacement meats, since they’re highly processed, or coconut milk which is discouraged on the MD so I’ll make appropriate substitutions. Cashew cream for coconut milk, oil for vegan butter and soy curls/TVP for homemade, minimally processed “meats” for example. (Last night’s dinner was a veggie lasagna with no-boil whole wheat noodles and cashew cream bechamel and it was amazing.) I do eat eggs and cheese as well as fish and chicken very sparingly, but my main source of protein now is plant based. And of course, lots of veg.

This diet is very vegan and vegetarian friendly. Don’t forgot to incorporate legumes, nuts, seeds, and whole grains daily to up your fiber and protein.
