    I mean I’m not Italian but I always use guanciale because carbonara is a treat for me. After a few years of using guanciale, I tried pancetta for the first time a few months ago and it tasted like bacon. Guanciale (and the pecorino Romano) make such a huge difference in the taste of the dish for me. If you have the money, I would do a test for fun just to see if there is a difference to you. The pancetta offered a more bacon taste because it’s more like bacon, the guanciale offered a more complex rich flavour to the dish over that id rather not even make carbonara if I can’t find guanciale.
