This was consumed quickly at the house but did trigger a passionate tomato debate. I broke in a new mortar and pestle with it (I think this classifies at a mocaljete?). Really tasty though and a fun and easy party trick.
Just for clarity, the recipe is really Kenji’s but a couple years ago I expanded the headnote to include background info that wasn’t originally there that I thought our go-to recipe for guac should include and added a discussion (and optional) instructions for using a molcajete, which also wasn’t originally there. There’s an update note after the headnote that describes what updates were made, when, and by whom.

My go to is Rick Bayless’s recipe.
