We’re making one of my favorite comfort classics, shrimp and grits. It’s savory shrimp, sausage, and bacon topped over creamy grits with a rich and flavorful gravy. Welcome back to our series where we take these grass-fed sausages from Costco and build a menu of meals around it. So, starting with the grits, we’re going to bring chicken stock and milk to a simmer and whisk in the grits. While that’s simmering, let’s crisp up some bacon and the slices of Costco beef sausage until they’re golden and crisp around the edges. Then comes the shrimp. And we’ve put together a very simple seasoning blend. Half of which we’re going to use to season the shrimp. Cook it until just pink. Then remove. And in the same pan, we’re going to sauté some garlic and veggies and butter. Add in a little flour and the rest of our seasoning. Then chicken stock to make a silky sauce that’s going to tie everything together. The shrimp, sausage, and bacon go back in for one final toss. And to our grits, we’re going to add some cheddar and parmesan. And now all that’s left to do is to spoon our gravy over the creamy cheesy grits. Don’t forget to top with our crispy bacon bits.
