
I found this recipe for cornbread and ended up making it. It’s healthy, low-sodium, and actually tastes like cake!
- 1 cup gluten-free all-purpose flour
- 1 cup yellow cornmeal
- 1/2 cup sugar
- 1/2 teaspoon salt
- 3 1/2 teaspoons baking powder (low-sodium if possible)
- 1/3 cup butter, melted
- 1 large egg (let it come to room temperature)
- 1 cup milk (1% fat)
- Cooking spray
