The scorpion pepper plant got really productive in the last month or so. It's going to be in the 20s and 30s here at night in the next few days, so a lot of peppers got picked. Since I have almost 2 dozen unripe peppers, any ideas on what to do with them? Will they ripen on the windowsill like a tomato?

    Inside a paper bag with a bell pepper works pretty well too, just check them frequently.

    I put a bunch of mine in a brown paper bag with a banana inside and most of them ripened to yellow/orange in 7-10 days or so

    Thank you! This is the first year where I’ve had any luck with peppers, and it throws off a bumper crop in November.

    Same here – used a sun lamp on them, worked like a charm.

    Underripened hot peppers have a grassy, herbaceous, and sometimes bitter flavor profile with a sharper, fresher taste compared to their ripe counterparts. Use it in a mild sausage, or throw them in with some pickels
