Had a long ass day on a Sunday a couple weeks ago, ended up grocery shopping at 8:00pm. Starving, I picked up a vacuum sealed flank from Kroger, seasoned with olive oil and soy sauce, gave it the old 2min per 45° turn per side on a 600° pellet grill. Sliced, finished with flaky salt and fresh lime juice, off a paper plate with my bare hands, best, table slapping, steak I’ve had in a while. We ate the whole thing standing on the kitchen island without saying a word.

Yes. As someone who pretty much exclusively went for ribeyes and NY steaks their whole lives. I’m enjoying skirt and flank steaks far more. They have a stronger “beefier” flavor and is my go to cut of meat now. Also more versatile imo
