Sheet Pan Veggie Ricotta Frittata, perfect for freezer meal prep! I prepped this sheet pan veggie ricotta frittata for postpartum and it’s such a delicious breakfast to have on hand! I used @galbanicheese’s low fat ricotta with 50% more protein than Galbani ricotta made with whole milk (6g vs 4g)which is the perfect way to add some more protein to your breakfast recipes or any recipe you like to use ricotta with! It makes this frittata so fluffy and the protein.
Ingredients:
•1 tablespoon olive oil
• 1/3 cup onion
•1 cup cherry tomatoes, halved
•3 cups baby spinach
•1/4 teaspoon garlic powder
•1 1/2 teaspoons Italian seasoning
•Kosher salt and fresh ground black pepper to taste
•8 eggs
• 1 cup @galbanicheese low fat ricotta with 50% more protein than Galbani ricotta made with whole milk (6g vs 4g).
Instructions:
• Preheat oven to 425° F.
Heat a skillet over medium heat and add olive oil once hot. Add in the onions and sauté for a minute, then add in the spinach, and cherry tomatoes. Sauté another 2-3 minutes or until the spinach is wilted. Remove from the heat.
In a medium sized bowl whisk together the eggs, spices, and ricotta until combined.
Spray a small sized sheet pan with non stick spray or line with parchment paper. Pour the egg mixture into the sheet pan, then evenly disperse the veggie mixture on top. Bake for 10-12 minutes or until the frittata is set.
Enjoy right away or freezer for later! If freezing, let cool completely then slice into 8 pieces. Put a layer of parchment paper in between each slice and add to a freezer gallon bag. Good in the freezer for up to 3 months!

Saute your favorite veggies to add in, and then bake this in the oven for about 10 to 12 minutes.
