INGREDIENTS: * 1 pound mild Italian sausage * 2 tablespoons of butter * 1/2 tablespoon olive oil * 1 large onion, diced * 2 large carrots, sliced or diced * Three ribs, celery, sliced * 2-3 garlic cloves, minced * 2 tablespoons tomato paste * 1 teaspoon Italian seasoning * 2 tablespoons fresh basil, chopped * 1 teaspoon ground black pepper * 1/2 teaspoon crushed red pepper * 1 teaspoon kosher salt * 6 cups chicken broth (1, 32oz box + 1, 15oz can) * 2 cans Great Northern Beans, drained * 1 cup heavy whipping cream * 3 cups fresh baby spinach, rough chopped * 1 tablespoon fresh lemon juice ** Parmesan or Romano cheese for topping
DIRECTIONS: 1️⃣ Peel and slice carrots, dice celery, dice, onion, and mince garlic. 2️⃣ In large stock pot over medium heat, add butter and olive oil. Add Italian sausage. Cook until browned. Add onion, carrots, and celery. Cook until carrots began to soften. Stir occasionally. Add tomato paste, garlic, Italian seasoning, black pepper, crushed red pepper, and kosher salt. Stir and cook for 60 seconds. 3️⃣ Add chicken broth and bring to a simmer. Add drained Great Northern Beans, whipping cream, and fresh basil. Stir. Rough chop spinach. Add and stir until spinach is wilted. Squeeze in 1 tablespoon of fresh lemon juice. Stir. 4️⃣ Top with Parmesan or Romano cheese. Delicious with crusty bread or garlic bread. ENJOY!!!
