Husband and I celebrated with the Les Tonnelles course (approx 13 dishes) with wine pairing. They do fewer dishes during the week and the longer dinner at weekends. The sommelier Daigo Fukushima was so friendly and knowledgeable.

We are lactose intolerant and they did not bat an eye in accommodating us. Chef Marco Santoscoy has taken over since they were last visited by Michelin. He’s added his own Hispanic flair to the traditional French cuisine which was fun but it’s clear he’s still perfecting his adaptations. Our thoughts might be based off the substitutions due to our dietary restrictions tho!

After 13 drinks I cannot attempt to remember the exact ingredients. Stand outs were the roast wild boar with mushrooms and both desserts – a fig and pistachio buñuelo then a hojicha cake topped vanilla ice cream, Japanese sweet potato frosting and meringue dusted with truffle.

I’d highly recommend a visit to the domain and a meal at Les Tonnelles or at their cafe on site and in town if you can’t make it out. Plus, Kanazawa is gorgeous! Has anyone else been?
