These are pint jars. Averages about 1 1/8” (inches) from where liquid has settled to bottom of rings.

Did you use a tested recipe and verify the headspace before putting the venison in the canner?

So long as the jars stay sealed it’s fine. The chunks of meat up out of the liquid might dry out a bit is all.

My chicken did this at first then settled back. Idk if the meat is absorbing a bunch of the liquid during processing, but this seems fairly normal.

Looks normal. raw pack liquid usually don’t cover the meat after processing. The parts exposed to air will turn grey or eventually black and look gross until you open it back up and mix it up or put it in a stew, then it’s not really noticable.
