Fantastic dinner at Dōma last night in Miami. Didn’t photograph the entire meal but the steak was phenomenal!
The wine:
The nose, a graceful bouquet of black cherry, plum, and violet with hints of graphite and tobacco. On the palate, supple tannins and balanced freshness reveal layers of dark berries, cocoa, and subtle spice. The finish is long and mineral-tinged — an elegant, polished expression of Saint-Émilion limestone
The wine really evolved dramatically during the decanting process as it breathed it was almost like tasting a completely different wine!
