    Don’t see a grade but probably would be USDA Select or maybe even lower if it was graded.

    The muscle structure looks right for ribeye… it’s just the leanest ribeye I’ve seen in my entire life

  5. This is ribeye from a cow that’s been pulling a plow from birth. This ribeye is from cardiac muscle. The cow this ribeye is from “Moo”s so loud the moo would tear you apart on a cellular level

    There’s not even any marbling with these, so they don’t look like any of the ribeyes I’ve ever seen before! These cuts look like slices for making dried beef jerky, if you ask me!

    Ahh the ever elusive cut, the Ribeye Of Round.

    Praised for its beefy flavor and lack of texture, I’d go medium rare, low and slow, maybe even reverse sear, into a trash can.

    I’ve seen better looking cardboard boxes than that. That cow must have been a runner. It had some deer in it.

    Edit – why do we call it “select grade” i wouldn’t select that if I had a gun to my head.
