Did You Know? Halloum cheese traces its roots to the island of Cyprus, where it has been made for centuries. Traditionally, it was produced from a mix of goat and sheep milk. This unique characteristic makes halloum one of the few cheeses that can be grilled or pan-seared without melting.
Ingredients
- Halloum cheese
- Red onion
- Tomato
- Parsley
- Avocado
- Lemon juice
- Salt
- Black pepper
- Olive oil
- Fresh rosemary sprig
- Pomegranate molasses
- Bread slices for serving
Directions
- Dice the red onion and tomato. Mince the parsley.
- In a bowl, mash the avocado. Add the onion, tomato, and parsley.
- Add lemon juice, salt, and pepper. Mix to create a fresh salsa.
- Cut the halloum into evenly sized cubes and thread them onto skewers.
- Heat a pan and drizzle with olive oil. Add the sprig of rosemary and brush it across the pan to infuse the oil.
- Grill the halloum skewers until golden on each side.
- Grill a few slices of bread in the same pan.
- Plate the halloum and drizzle lightly with pomegranate molasses.
- Serve the grilled halloum with the avocado salsa and grilled bread.

That looks really tasty….but that’s not it for this sub.
I would happily eat this. It is not a grilled cheese however.
What a beautiful meal. Not a grilled cheese though!

So I’m a strong advocate for maintaining the purity of the sub, calling out melts marauding as grilled cheeses like the most enthusiastic of us zealots. However, I think this meets the sub’s rules.
*This is literally grilled cheese.* it’s not a melt, it’s cheese cooked under/on a grill. You can’t get more pure than this. I think this should be allowed.
It is *literally* grilled cheese, but not *a* grilled cheese sandwich, according to the rules of this sub.
Edit: I would devour it either way 🤷🏽♀️
OP took it literally.
To be fair, halloumi is often called grill cheese.
