South Carolina sweet potato casserole is a dish my family has been enjoying for decades thanks to my late grandma Irene. In today’s episode of lighter holiday recipes that can also be used for meal prep, I’m reimagining this tasty dish with about 40% less calories. In order to maximize the natural sweetness of the potato, I select jewel or garnet red sweet potatoes and I bake them for much longer at a lower temperature at around 300 to 325°.
