

This is the first offset I've ever had, been smoking on my WSM for ages so I'm excited to finally try my hand at an offset. (Hark Chubby if anyone is wondering)
Took a couple hours of work to restore it a bit but it seems great.
I'm already thinking of adding in fire bricks to the bottom of both chambers, and finding a small water pan and maybe some replacement handles haha.
Any tips and tricks for a first time offset user? I hear some people use the gaffle plates and some don't, any opinions welcome

Can you take me through your restoring steps. It looks beautiful?
I use an offset. I dont use any special plates or anythin other than what it came with. Its way more work than an electric, but I feel like its a more personal cook when I tend it the whole smoke. I put a drip pan under the grates to catch the drippins and another one closer to the fire side with some apple juice or beer in it for moisture during. Good luck man, I love my offset. Aslo, nice restore job!

Not exactly a baffle plate, but a vertical baffle near the fire box is a must have for me. Something like this https://youtube.com/shorts/PBj3KCKKRxk
For my Brazos I actually cut out the factory angled plate next to the fire box which created a hot spot directly in the center. Cut that into a semi circle, drilled some holes, and welded some feet on it.
End to end even cooking now. Or close enough anyway. The biscuits right by the fire box were more done.
