Avgolemono Soup (Greek Lemon Chicken Soup)
Ingredients (serves 4–6):
Broth:
• 8 cups (2 quarts) chicken broth
• 1 cup orzo pasta (or rice)
• 3 large eggs
• Juice of 2–3 lemons (about ½ cup, to taste)
• 2–3 cups cooked shredded chicken
• Salt and pepper, to taste
• 2 tbsp olive oil (optional)
Garnish:
• Chopped parsley or dill
• Lemon slices (optional)
How to make it:
1️⃣ Cook the orzo – In a large pot, bring the chicken broth to a boil. Add orzo and cook until just tender (about 8–10 minutes). Reduce heat to low.
2️⃣ Make the egg-lemon mixture – In a medium bowl, whisk the eggs until frothy. Slowly add lemon juice while whisking continuously.
3️⃣ Temper the mixture – Slowly ladle 2–3 cups of hot broth (one ladle at a time) into the egg-lemon mixture while whisking constantly.
4️⃣ Combine and thicken – Pour the tempered mixture back into the pot with the remaining broth and orzo. Stir gently over low heat until the soup thickens slightly and turns creamy (do not boil).
5️⃣ Add chicken & season – Stir in shredded chicken, olive oil if using, and season with salt and pepper to taste.
6️⃣ Garnish & serve – Ladle into bowls and top with fresh parsley or dill. Add a lemon slice if desired.
