Tonight was a posh burger evening.

Burger patties were dry brined Rump, Ribeye and Brisket mix with about 25% fat. All from a local butcher.

Topped with slow cooked Shallots and Emmental cheese.

Side of (home made) Rosemary Salt on Beef Dripping wedges.

Cognac Peppercorn sauce

My backgarden smelt incredible when the patties were cooking on my flat plate.

I actually cried with joy eating that burger.

    Those look insanely good! Peppercorn sauce is such an underrated burger condiment. I made what I called Smash au Poivre a while ago where I made smashburger patties and dressed them in a cognac peppercorn sauce that I melted some white american and gruyere cheese into since I decided to not put any cheese on the burgers thenselves. Easily some if the best burgers I’ve ever made.
