This new concept is located at the site of the renowned Picasso restaurant. It is designed to blend history with modern sophistication. The new space is designed by Martin Brudnizki, whose design philosophy has, until now, drawn the warmth of the terracotta and the coolness of the mosaics with the French Riviera and the most picturesque coast of Italy and the sea elements of the design of the restaurant.
With the restaurant accommodating about 240 guests, the dining room is designed to be spacious yet intimate to promote the enjoyment of the gourmet meals as the guests relish the incredible views of the Bellagio fountains. The restaurant has a private deck with a Riva yacht that is outfitted to provide a unique, unparalleled access to the fountains for fountain-side dining, a first of its kind in the city.
An Unmatched Seafood Experience
The primary focus of the culinary experience at CARBONE RIVIERA is the luxury seafood that is a true seafood lover’s dream. The new Italian coastal cuisine menu includes the finest seafood that is flown in at the peak of its freshness, and allows guests to experience the most incredible dishes that highlight Nantucket Bay Scallops, Scottish Langoustines, and a contemporary interpretation of crudo.
The highlight of the restaurant’s entire menu is the signature whole-fish program. Customers can select from a rotating menu of whole fish such as Sea Bream, Branzino, and Dover Sole. Every preparation is a masterpiece. Each fish is displayed spectacularly before the guests. It is also a highlight of the show to have the fish grilled over Japanese charcoal, baked in a salt crust, and roasted al forno. The other highlights include the fresh pasta like the Linguine Vongole Rosso and the Cappellini Crab AOP, and the decadent side dishes such as the Lobster Polpette and “Mario’s Famous di Mare Salad.” For the more traditional CARBONE offerings, the classics like Spicy Rigatoni Vodka and Caesar alla ZZ are also available. For the drinks and the food at CARBONE RIVIERA, the Champagne and the Italian coastal whites are to accompany the crudo and the antipasti. CARBONE RIVIERA possesses a custom design 33-foot Riva yacht, Fortuna, where guests can experience the Riva yacht and The Fountains of Bellagio. This yacht is a limited edition, of which there are only 18 globally. From the yacht guests can watch The Bellagio Fountains in a way the rest of the patrons will not.
The yacht reflects timeless elegance and artistry in a statue form and provides once in a lifetime experience to the restaurant patrons, and to those who appreciate beauty.
