I have never cooked chuck as steak before. I've braised it, smoked it, ground it…but never just cooked it. Made a ribeye and a chuck last night and the chuck was actually incredible! Was this just a fluke? Or do people do this on the reg? I'm excited to try it again.

Rib steak, chuck steak, smashed potato. All done in a cast iron pan. Salt, pepper, ghee. Nothing fancy.

    When I lived out in the country, the local general store had a meat cutting department and their chuck steaks were so damn tender and really inexpensive.

    No. Chuck Roast, yes. Stew, of course. But as a steak is the worst use of Chuck.

    I do a chuck in the sous vide and then sear it. Its amazing.
