On an instant read or those meater things? I find the meater probes themselves heat up and read too high, but also, it looks like you are just starting the stall as the moisture is just starting to come to the surface.

Cooking it too fast of you hit stall 167 in 3.5 hours . I put mine on 200 to start and cook it until it stalls , then wrap and turn up the heat to 225-250 until I hit 205 then pull it and rest it. Low and slow. I just bought a tenergy solis digital 6 probe and have had good results so far
