First of all thanks for all the comments on my previous post. Wasn't expecting that much traction.
I read all the comments.
Some people were recommending egg – this is a vegan sub and I'm a vegan so I wasn't going to do that, but maybe they meant vegan egg. While some people recommending sirraca, chilli flakes or tobasco – I said I didn't like hot or spicy.

But the general consensus was it needed more SALT, "everything bagel seasoning" and balsamic/lemon for acidity.
I'll have to order the everything bagel seasoning online because I'm from England and we don't have that, but anyway, here it is.

The changes I made from my previous post is:

  • added nooch and lemon juice to my avocado, as well as more salt (I used garlic salt)

  • used larger tomatoes. Diced on the frying pan with balsamic vinegar and plenty more garlic. Added more salt and garlic salt

  • topped off with fresh basil

Sorry the pics aren't great. My phone has a problem with focusing and I really wanted to eat it. Hubby gave this a score of 9/10. The last one he rated 6 so definitely an improvement. When I asked what it needed to make it a 10, he simply said "more" 😄

    A great way to get more salt is buying a small tub of Miso Paste, it has healthy bacteria in it and you can mix it in with your lemon juice and nooch for a super zesty umami flavour. Highly recommend it.

    This sounds delicious! Some ideas to switch up the bagel seasoning and add texture in case no one mentioned it is whatever seeds you have on hand. My go to are pepitas, sunflower, and hemp. Nuts are nice as well like slivered almonds, crushed pistachios, or walnuts. Cooking your balsamic down in a pan til reduced and slightly thickened makes a nice glaze too, the acidity mellows and it takes on a tart sweet caramelized flavor.
