So I made baked chicken legs with veggies – super easy and tasty. I trimmed the skin off the chicken to cut extra fat. Chopped up some potatoes (kept the skin on for extra fiber), onion, broccoli, and cherry tomatoes (you can swap in whatever veggies you like). Drizzled a little olive oil, added some herbs and salt and baked at 180°C for 35–40 minutes. I gave it a quick stir halfway through. Done. Simple, healthy, and delicious🙌

    Looks good. I hate handling chicken so there is no way I could skin the legs before cooking.

    Living by myself now these one pan/one pot meals have become a thing for me now. Throw it all together, season and oil, into the oven, eat. Less dishes too, and always leftovers.

    This looks super good! Do you ever marinate the chicken first or do you just season and bake? I’m trying to improve my Mediterranean-style meal prep and this seems really simple.
