Cleaned out the summer tomato beds in the garden. Now I’m figuring out what to do with this insane amount of green tomatoes and will take suggestions.

I make marinara, burrito sauce, tomato soup, slice them and cook them on meat with some olive oil and spices, salsa, freeze some whole so I can make a fresh sauce in the winter.

Pickled green tomatoes are great. If you want to try to ripen them, put them in paper bags with an apple or banana away from direct light and they’ll ripen over the next few weeks.

I’ve got that and more jalapino, we’re canning a ton of green tomato jalapino salsa. Should last the winter.

I wrapped my green tomatoes in brown paper and put them in a cardboard box in a cool place away from light. I didn’t add an apple or banana because I was scared they’d ripen too quickly. After one week some are already started turning red!

Salsa! We made lots of salsa with our tomatoes. Especially green salsa. Its yummy and can use up a decent amount of tomatoes
