Still eating from the garden in Wisconsin. Tomato pie with biscuit crust
These are tomatoes I brought indoors to ripen when the plants were no longer happy with the temperatures. Not as tasty as midsummer but a little salt, pepper, and heat works wonders.

Recipe:
Jiffy biscuit mix (or your favorite biscuit recipe)
2 big beefsteak or 3-5 smaller tomatoes
Topping: 1 cup mayonnaise and 1 cup shredded sharp cheddar cheese
Prepare mix according to package to make biscuit dough (mix plus 1/2 cup water)
Spread biscuit dough in lightly greased pie plate. Push dough to even layer, pushing some at least 2 inches up sides of pie plate.
Top with sliced tomatoes. Season with salt and pepper if making in summer I add fresh basil.
Mix together mayonnaise and cheese. This is a recipe where you want to shred from a block of cheese. The pre shredded will not blend well with the mayonnaise.
Bake at 400 F for 30 to 35 minutes.
Cool at least 30 minutes. Don’t skip this step or you’ll end up with runny pie. This is a stoneware pie plate so I let it cool 45 minutes
